Begin your Moroccan gastronomic tour by meeting your professional guide in the early evening at your Hotel/Riad or the main square of Marrakech's medina. 

Hear a preview of what's to come and take your time taking in the dizzying square, which was designated a UNESCO World Heritage site in 2001. Djemaa El Fna takes on a more lively attitude in the nights, when it fills with prettily lighted hot food booths and throngs that gather here for their nighttime strolls and snacks.

Walk around the square, then visit some of the side streets to discover food places that are typically overlooked by visitors. Try some of the local items, such as almonds, olives, and other specialties, and then head to a chicken and beef market to see the locals haggle for meat. Haggling is an essential part of Moroccan society, and seeing the transactions provides a unique insight into local culture.

Explore a spice market as your guide tells you about Morocco's importance as a spice trading center, and see the rainbow-colored items such as saffron, paprika, cardamon, anise, and turmeric. Learn how to use them to improve tagines and other basics before strolling through a bustling souk.
